Soil Description: slightly alkaline due to the presence of red lime
Training System: unilateral cordon spur pruned; 2.000 vines/acr
Productivity: 2 tons/acre
Harvesting: only the best bunches, hand-picked at the end of September and delicately placed in baskets
Grape Processing and Maturation: First comes a long fermentation accompanied by maceration of the skins at controlled temperature. The second step is malolactic fermentation and a 12 to 18-month aging period in French oak barrels. Further aging in the bottle completes the evolution.
Sensory Evaluation:  Intense ruby red in colour, with garnet highlights; clean, opulent and rich aromas of aniseed, ripe red fruits, coffee and tobacco; smooth, round tannins give structure and a lasting finish.
Alcohol Content: 14,5 vol.%
Serving Temperature: 18℃ (64℉) in a medium bowl glass to truly savor all the fruity notes
Recommended Food Pairings: profound with charcuterie, aged goat cheese, pasta dishes baked in the oven, grilled red meat and pork
